scalloped potatoes

I haven't posted a recipe in a while and since I love potatoes, I thought I would share my new favorite potato recipe. I got this from my mother-in-law. The first thing you do is boil 6 potatoes in their skins. I made baked potatoes and just cooked a few extra. I then put them in the fridge to cool and used them the next day. Once your potatoes are cool, peel them and slice them into a casserole dish. For the sauce, melt 4 Tbs. butter over low heat in a saucepan. Add 4 Tbs. flour; blend together. Add 2 cups of milk. Cook until thick and smooth, stirring constantly. Add about 3/4 tsp. salt and 1/8 tsp pepper. Cook for a couple of minuets, stirring, after coming to a boil. Remove from heat and add 1/2 tsp dried parsley. Pour the sauce over the sliced potatoes in the casserole dish; mix together. Cover with a lid and bake for 1 hour at 350 degrees.
Remove from oven- top with some grated cheddar cheese and sprinkle some paprika around. Return to oven and bake until the cheese melts. About five minutes. Walla, a delicious dinner if served with a green salad and some fruit.

A Sign of Spring


Here is the first flower that bloomed in our yard. I really wanted to take a picture of it surrounded by green shoots and lush grass, but before I got my camera, small fingers had clasped it like a leprechaun who snatches gold. This led to some arguing between two siblings about when we should and shouldn't pick flowers. I can't really blame her for picking it. We have all been waiting for the arrival of the flowers.

I went in for my third ultrasound today. Just checking in to see how everything is going with the "little darling." She is growing and moving and keeps me awake at night doing flips off the walls of my uterus. At my last doctor appointment I was told that my hematoma had changed shape. It grew in one direction and shrunk in the other. So I got the doctors orders for another ultrasound to follow up on that ornery thing. Some problems come with perks... more pictures = more reassurance that she is doing well.
