Got any spare Zucchini?

Here is a fabulous recipe! I give it four stars and just in case your neighbors keep giving you zucchini you will have something yummy to make with them.
Zucchini Bars
3 eggs
2 cups sugar
1 cup butter, melted
2 cups grated raw zucchini
1 tablespoon vanilla
2 cups all purpose flour
1 cup whole wheat flour
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1 tablespoon ground cinnamon
1 cup coarsely chopped walnuts

Topping
1 teaspoon cinnamon
1/2 cup wheat germ
1/2 cup brown sugar

Beat eggs until light and foamy. Add sugar, butter, zucchini and vanilla and mix lightly but well. Combine flours, salt, soda, baking powder and cinnamon and add to egg/zucchini mixture. Stir until well blended; add nuts. Pour into 12x17 inch jelly roll pan. Combine ingredients for topping. Sprinkle topping mixture over batter. Bake; cool on rack. Cut into squares.

Temperature: 350
Time: 15-20 minutes

Thanks for the recipe! I have so much zucchini! I tried this yesterday it was good.
